Virtuous Final Event
The Industrial Systems Institute hosted on November 3, 2023 the final event of project Virtuous at the premises of the ATHENA Research Center in Athens. The event provided a good opportunity to present the final outcomes of the Virtuous project as well as network with SMEs and other projects in the domain of food.
The Virtuous project has developed an integrated computational framework with the ability to screen food according to their components and make a classification of their expected taste, thus functioning as a “virtual tongue”. The platform has a potential for being used as a taste predictor in the food industry, precision agriculture, and as a link to neuroscience for taste determination. Invited talks in the event were given by the University of Florence on the contribution of sensory science to food perception and preference, Vinhood on taste profiling, Fitly on the future of personalized nutrition, ATHENA Research Center on GRE Taste project, and the University of Aegean on food waste.
